1. Nguyên liệu cho món thịt ba rọi ngâm nước mắm:
- 1kg thịt ba rọi
- 300ml nước mắm ngon
- 1.2 đường cát trắng
- Muối
- 1 nhánh gừng nhỏ
2. Chuẩn bị
Thịt ba rọi chọn loại rút sườn sẽ dầy nạt và ít mỡ. Chọn miếng liền thịt. Rửa thịt sạch , cắt thành từng lát dầy 4cm
Gừng chọn loại gừng sẻ tươi , cạo vỏ, đập giập
2. Cách làm như sau:
– Cho thịt vào nồi nước đã nêm muối và gừng cho vào, luộc cho đến khi thịt chín, vớt ra ngâm vào nước đá lạnh khoảng 15 phút, vớt ra để thật ráo
– Nước mắm, đường nấu sôi, hớt bọt, để nguội. Khi nguội , hỗn hợp này sẽ sánh như mật, nếu thấy lỏng như nước đường là không đủ đường. Để thật nguội
– Xếp thịt vào thố hay keo thủy tinh, cho nước mắm vào, nếu thịt nổi lên thì dùng vỉ tre gài cho chìm vào nước mắm. Một tuần sau có thể lấy ra dùng được. Miếng thịt sẽ trong, đẹp và ngon
– Cuối cùng, để ăn món này ngon ta cần cắt mỏng lát thịt, dùng ăn chung với hành, dưa muối chua, ăn với cơm hoặc bánh chưng đều ngon. Món này để lâu cả tháng vẫn không hư.
